  1. Place chocolate chips and coconut oil in a small bowl. Melt in the microwave at 30 second intervals, stirring in between, until melted.
  2. Stir in peppermint extract. 
  3. Dip mini cookies into melted chocolate to completely coat and place on a parchment lined tray. Repeat with remaining cookies. 
  4. Place tray in the freezer for 5-10 minutes to set the chocolate.
